A 1926 Amsterdam municipal greenhouse — three glass structures, 14-metre-high ceilings, and full Frankendael park surroundings — converted by chef Gert Jan Hageman into one of Amsterdam's most celebrated farm-to-table restaurants. De Kas grows its own produce in an attached greenhouse and a farm in Beemster. What's harvested that morning becomes the menu. Two sittings per service, set menu only. One Michelin star.

Rijsel is the closest thing Amsterdam has to a true neighbourhood institution. Belgian-French bistro run by the same team since the 1990s — wood-fired rotisserie chicken and frites, long communal tables, local crowd. No pretension, no concept. Just correct food in a proper room. On Marcusstraat in Oost, which means a short walk from Volkshotel, Hangar, and the Dappermarkt.
