De Kas
A 1926 Amsterdam municipal greenhouse — three glass structures, 14-metre-high ceilings, and full Frankendael park surroundings — converted by chef Gert Jan Hageman into one of Amsterdam's most celebrated farm-to-table restaurants. De Kas grows its own produce in an attached greenhouse and a farm in Beemster. What's harvested that morning becomes the menu. Two sittings per service, set menu only. One Michelin star.
